he Egg-plosion salad (58 RMB) at Hatsune is a relatively new addition to their menu, and not only is it delicious, it is also Paleo-friendly, if that’s your thing. A mess of crisp, fresh arugula leaves strewn with juicy, salty salmon roe and tobiko roe, it is completed by the perfectly poached, very runny egg placed in the middle of the salad. The citrusy, garlicky dressing tossed with the leaves complements the other flavours perfectly. Order this as a light, refreshing side on your next visit to Hatsune.

The Napa boys are back with a new location in Chaoyang Park (They are currently closed for renovation and will be back and better than ever on the 29th of February). All their food is organic, local and seasonal, and of course, mouth-watering. Their Frisee Salad with Coddled Egg and Bacon tastes so good that it’s almost hard to believe that it’s healthy, as it tastes slightly like a full English. A bed of slightly bitter greens is presented with a layer of earthy, salty sautéed mushrooms and dressed with a bacon vinaigrette. The crowning glory is the egg, which you break and mix in with the salad.
