吃川菜？这座最“咸”城市才是隐藏大佬！

上一期《神奇的中国》，我们跟随来自俄罗斯的探员梅丽莎逛了自贡的宇宙第一灯会，“南国灯城”的美誉可谓名不虚传。这次我们还要继续探索这个宝藏城市，这座小城还有什么世界第一？有哪些神奇的惊喜等着我们？

▌化成水，也认识你‍‍‍‍‍‍‍‍‍‍‍‍‍

自贡是一座因盐而生、因盐而兴的城市，在近两千年的井盐生产过程中，孕育了独特的井盐文化。自贡城市的名字就和盐有关，“自”是自流井，“贡”是贡井。

Zigong is a city that owes its birth and prosperity to salt, nurturing a unique brine culture over nearly two thousand years. The word "Zigong" is understood to be connected to salt production. "Zi" means "artesian well", "Gong" means "gong well".

燊海井是世界上第一口人工开凿的超千米深的大井，距今已经有180多年的历史，是国内仅存的还在采取传统工艺提卤制盐的古井。

Shenhai Well is the world's first man-made well which is over 1,000 meters deep.

古法制盐首先要从盐井提捞卤水到灶房，然后要经过烧盐、铲盐、淋盐、抬盐等程序。今天井盐技术不断发展，机械化早已代替了手工劳作，但自贡井盐传统熬制技艺代表性传承人游强告诉梅丽莎，燊海井人还在百年如一日地沿用着传统的工艺。

这古法制取的井盐有什么特别之处？梅丽莎邀请游强辨别传统熬制的井盐和超市普通的盐，即使盐溶于水中，游强也能轻松分辨。他的语气笃定、自信，这来自于常年的积累与日复一日的坚持。

如果说过去制盐是为了生产生活，那么现在更多是为了古老技艺和前人智慧的延续和传承。

In the past, traditional salt-making served livelihoods; today, it symbolizes the continuation and inheritance of ancient skills and ancestral wisdom.

燊海井大门口有一副联语：一泉流白玉，万里走黄金。古代盐都人民的智慧和文心“跃然纸上”。

一方宝地，千载盐都，百代伟业，万古传扬。盐业，不仅创造了自贡的繁荣，也给这座小城带来了历经千年沉淀的文化底蕴。

▌以“亿年”为计时单位

“千年盐都”的历史在梅丽莎看来已经足够长了，但是对于同样曾在这片土地上繁衍的庞然大物来说，“亿年”才是计时单位。

自贡是全球著名的侏罗纪“恐龙之乡”，是发现和保存侏罗纪恐龙化石最多、保存最完整的地方，几乎包含了距今2.05亿至1.35亿年前侏罗纪时期所有已知的恐龙种类。这里的恐龙博物馆还被美国《国家地理》评价为“世界上最好的恐龙博物馆”。

Zigong Dinosaur Museum has a collection of fossil specimens that almost includes all the known dinosaur species of the Jurassic period, 205-135 million years ago. It was regarded as "the best dinosaur museum in the world" by American National Geography Magazine.

博物馆内数以千计排布有序的恐龙化石都是真实的，让梅丽莎不仅感叹自己好像置身于电影《侏罗纪公园》的场景里。

讲解员告诉梅丽莎，博物馆的镇馆之宝叫太白华阳龙。这具化石是目前世界上发现时代最早、保存最完整的剑龙骨架化石。有趣的是，剑龙背上的剑刺是用来吸热和散热的，可以用来调节体温，所以它也被称为“行走的空调”。

Huayangosaurus taibai is the treasure of the Zigong Museum. It's the oldest and best preserved stegosaurus fossil ever found in the world. The spines on the back of the stegosaurus functioned as a way to absorb and dissipate heat, regulating body temperature. That's why the creature is aptly referred to as the "walking air conditioner."

更让人感到神奇的是，侏罗纪时期的霸主居然不是霸王龙，而是和平永川龙，它要比霸王龙还要早几千万年左右。

Yangchuanosaurus hepingensis was the dominant force in the Jurassic period. In most modern movies, the T-Rex is seen as the overlord of the dinosaurs. But that's not true. The Yangchuanosaurus is tens of millions of years older than T-Rex.

在侏罗纪时期，这片土地曾经是恐龙的家园。如今，穿越时光的洪流，它们成为了岁月赐予这座城市的礼物，以另一种形式延续着这个短暂而辉煌的时代。

▌逃不过的“真香定律”‍‍‍‍‍‍‍‍‍‍

梅丽莎早上在超市买盐时，遇到了一个当地的姐姐，她热心地向梅丽莎推荐自贡美食“兔兔”。她走在自贡的大街小巷，也随处可见“兔子餐厅”，这不禁激发了梅丽莎的好奇心：自贡人为什么爱吃兔子呢？

地处丘陵地带的自贡，虽然气候不错，饲草丰富，但是不适宜饲养大型牲畜，养兔业也由此发展起来，当地明确记载的养兔史可以追溯到清朝乾隆年间。

Southern Sichuan, especially Zigong, is renowned for its rabbit dishes. This distinction is attributed in part to Zigong's hilly terrain, which, while abundant in pastures, is unsuitable for large livestock farming. As a result, the rabbit industry has flourished in the region.

Rabbit breeding has a long history in the Zigong area, with documented records tracing back to the reign of Emperor Qianlong during the Qing Dynasty (1644-1911).

自贡的兔肴多采用盐帮菜系做法。自贡盐帮菜是唯一以地市州命名的菜系，既具备川菜“百菜百味、烹调技法多样”的传统特点，还“味厚香浓、辣鲜刺激”。

The delectable taste of Zigong rabbit is further enhanced by the culinary mastery of the region. With a rich culinary tradition, local dishes are renowned for their bold and spicy flavors.
