This week, we're delighted to introduce 12 new non-alcoholic aperitifs, spirits and wines to Shanghai9, joining our existing three Seedlip spirits. With zero alcohol (0.0% ABV), these drinks represent an exciting new generation of beverages, some carefully crafted without alcohol from the outset, others produced using innovative dealcoholisation techniques that remove the alcohol while preserving the character, aromas and complexity of the original.

This is what happens when you put a conservation biologist behind a bar. Paul, Everleaf’s founder, is a conservation biologist and a bar owner. Back in 2019, while serving some of the world’s best spirits, he knew exactly what made them great. But when someone asked for a great non-alcoholic option, finding the right answer wasn't so simple. That got him thinking—could he create a non-alcoholic drink with the same depth and complexity of the finest drinks? He turned to nature to find out.
The answer is in nature. Crafting Everleaf took over a year of experimentation. Paul dove deep into researching plants, sustainable sourcing, and testing methods like dehydrating, macerating, and extracting to create the perfect balance of complementary yet surprising flavours and perfect texture.
