鸡枞

鸡枞在云南人的心目中，是毫无疑问的菌王，不是它有多名贵，而是鸡枞吃起来不仅有菌菇的清香而且还有鸡肉的肥美，这也是它名字的由来。目前人工栽培鸡枞依旧无法实现，这就意味着只要雨季一过，这种山珍就会消失得无影无踪，只能等待来年大自然的馈赠。
Collybia albuminosa mushroom (Chicken Mushroom) to every Yunnanese is undoubtedly the “Mushroom King”. It’s not about how rare or expensive it is. Despite it’s fragrant mushroom aura and it has the similarly rich taste of chicken meat. And that’s where the name “Chicken Mushroom”come from. Chicken Mushroom can’t be artificially cultivated by human yet and this means that as soon as the rain season is over, this delicacy from mountain will then disappear for while.
松茸
Tricholoma Matsutake mushrooms
“高端的食材往往只需要采用最朴素的烹饪方式”，是舌尖上的中国对松茸的评价，这句话传遍中国的大街小巷，有人认为松茸的味道是松木的芬芳，有人认为那是矿物的清香，在日本有“蘑菇之王”的称誉。
“Sophisticated ingredients often only need to be cooked simply” commented by A Bit of China regarding the Matsutake Mushroom. Where you eat it raw or put it on grill, It’s rich and unique taste can fulfill your whole nostril. Some people think it has the amor from the pine wood while others think it rather has a tinge of the unpolish mineral taste. It is a pure and rare edible mushroom, being known as the "king among mushrooms".
干巴菌
Ganbajun mushroom
云南的市场上最贵的菌子只有一种，那就是干巴菌，在原产地都动辄一两千一公斤的售价，松茸与之相比实在是小巫见大巫，干巴菌不仅昂贵，而且极难清洗，清理难度堪比修手表，纵横的沟壑里隐匿着各种细小的腐草、松针、泥土，挑去后还要用清水混合面粉或食盐反复淘洗。
In the Yunnan market, the most experience mushroom is always one kind which is the Ganbajun Mushroom. Consider its sale price of one or two thousand Yuan at the place of origin. Gangbajun makes matsutake pales into insignificance by comparison. Gangbajun not only has an expensive price. its cleaning process can be as difficult as fixing a watch. Inside the compact gills hidden the microscopic pieces of grass pine needle and soil, after getting rid of the pieces, you still need to rinse a couple of times with water combining flour or salt.
我一度认为在其他地方干巴菌没有松茸出名，是因为没有一朵干巴菌能走出云南。它其貌不扬的外表下藏着你无法拒绝的鲜香，汪曾祺先生曾这样评价它“这东西能吃？”到 “这东西这么好吃！”
Its richness in taste makes a strong contrast with its unappealing appearance. Mr. Wang, Zenggi has described it by expressing from"How is this edible?" to "how is this delicious?".
牛肝菌

牛肝菌的种类繁多，牛肝菌属种类庞大，目前发现的就有近400种，按照颜色常见的牛肝菌被分为：“白、红、黄、黑四类。
Boletus is a huge genus that has 400 species, based on the colors, the common edible Boletus can be divided into four kinds: white, red, yellow and black.
白牛肝菌学名叫做美味牛肝菌，红牛肝则是比美味牛肝菌还美味却有毒的见手青，这也是云南人每年都以身犯险、欲罢不能的美味菌菇，也是最容易进医院的菌。
White Boletus is Boletus edulis (Penny Bun). Red Boletus (Boletus speciosus) is a kind that's more "edulis" than Penny Bun but poisonous.
见手青

见手青顾名思义，是菇体伤变后呈靛蓝色的牛肝菌的俗名，这种菌菇有致幻的神经毒素，且毒性复杂。吃菌中毒分为以下两种情况，误食其他相似毒菌，以及吃了还没熟的见手青。即便如此，见手青还是以爽滑的口感、浓郁的香气吸引着云南人。因此想要食用植物界”河豚“的美味需要谨慎。
As its name imples, the Red Boletus turn into the color of indigo, after their mushroom bodies get injured or damaged. It contains the neurotoxin that is similar to lyseigic caid diethylamine which is the hallucinogen. The real "poisoning by Mushroom "happens in two situations,mistakenly eaten poisonous mushroom that look like edible mushrooms or eaten the undercooked Red Boletus. Even so,because of its creamy textur and aroma attracts many people to risk their liver for a taest. If you want try the "pufferfish the mushroom world" make sure to have it properly and thoroughly cooked.
青头菌

雨后的云南山中，最多的恐怕就是青头菌。它戴着独特的绿色小帽，高调地从湿润的土壤中探出头来，虽然它全身都泛着淡淡的青铜色，却足以勾起人们的味蕾。
As a special kind of wild mushroom, it grows in a very pure environment, mainly in the grass in the forest. It is rich in protein, amino acid, plant fiber and other ingredients. It has a delicate entrance and a strong natural fragrance.

导致2000多人中毒，20多人死亡。

More than 600 cases of poisoning occurred, and more than 2000 people became sick after eating poisonous mushrooms in Yunnan last year, including more than 20 deaths, according to a report released by Yunnan Provincial Center for Disease Control and Prevention.
