The Love Bite has been a long time in the making. The playful drink is a true collaboration from Candor staff: co-owner Aaron Feder created the rummy gummy bears; Randy Zhang came up with the cocktail pairing; and, owner Melody Chen dubbed it the Love Bite.
The recipe for the rummy gummies themselves is a well-guarded secret. The colourful chaps are the result of six months’ work, and over 20 attempts that saw Feder playing with various ingredients to get the texture and flavour just right. And these babies feel just like your booze-free version, with the strong hit of overproof rum making them oh-so-much fun.
After perfecting making the gummies, Feder needed a cocktail pairing; something a touch sour to balance the sweet, which is where barman Randy Zhang – also known as the mocktail king – comes into the creation story.
Originally designed to be alcohol free, the accompanying drink now contains Havana 3 Rum, mixed with fresh pineapple and grapefruit juice, raspberry syrup, coconut milk and French heavy cream. A grate of lime zest adds a fragrant nose to the glass, which is served with a side of whipped cream and gummies.
