Noodle Making
Noodles(lamian拉面) are a favorite food in Chinese cooking for their flavor as much as their symbolism: long noodles mean a long life.
Because of different methods of preparation and use of materials and ingredients, there are over a thousand types of noodles from all over China with local characteristics.
Chinese noodles vary in width. They can be thin as needles, or thick as chopsticks. However, when it comes to length, they are usually served long and uncut. This is because long noodles are a symbol of longevity in Chinese tradition. Thus, during birthday celebrations, people will serve "longevity noodles” hoping for longevity.
On July 5th, our interns went to the restaurant to learn how to make noodles.
The master(师傅) said that Lamian is a type of noodle made by stretching and folding dough into strands. Depending on the number of times the dough is folded, strands can be made into various lengths and thicknesses.
Our interns tried to learn how to make lamian using its unique noodle-making method.
We sincerely hope everyone enjoyed a lot for the noodle making nights. It is also an unforgettable opportunity for interns to learn Chinese culture.
