Barramundi is Aboriginal for “large-scaled silver fish” and is internationally renowned for its deliciousness and versatility. Barramundi is low on the food chain and lives on a largely vegetarian diet with a small amount of sustainably sourced fishmeal that gives it a fish-in fish-out ratio of 1:1, truly the “goldilocks of sustainable fish.” Barramundi is also a hardy fish species, which allows us to raise them without any hormones, antibiotics or chemicals.

Barramundi proves to not only offer a desirable taste and culinary properties, it’s also packed with heart-healthy Omega-3s. It’s low in Omega-6 which is something you want to consume in moderation due to its inflammatory nature. Nutritionists recommend an Omega-3-to-Omega-6 ratio of no more than 3:1; and our barramundi has the ideal 1:1 ratio.

      Barramundi sashimi with sesame dressing

      澳洲肺鱼生鱼片配芝麻酱

500 g sashimi-grade boneless barramundi fillets, skin removed, very thinly sliced

2 tablespoon light soy sauce

2勺酱油

2 tablespoon freshly squeezed orange juice

1 tablespoon fish sauce

1勺鱼油

1 tablespoon sesame oil

1 kaffir lime leaf, central vein removed, finely shredded

1 fresh long red chilies, deseeded, finely chopped

2 tablespoon sesame seeds, toasted

1 medium orange, segmented

mint leaves, coriander leaves, to garnish

Arrange fish on separate serving plates.

In a small bowl, whisk together soy sauce, juice, fish sauce, sesame oil, ginger, shredded lime, chilies and sesame seeds. Season.

Scatter orange segments and herbs over fish. Drizzle with dressing. Serve.
