Mascarpone is fresh cheese made from cream denatured with citric acid. After the denaturing process, whey is removed without pressing or aging. It is milky-white and easily spread. When fresh, it smells like milk and cream.


马斯卡波尼是由含有柠檬酸的稀奶油制作而成的新鲜奶酪。在处理过程之后,除去乳清而不压榨或老化。它呈乳白色,易于涂抹,新鲜时,它闻起来像牛奶和奶油。

 













Mascarpone Cheese is used in various dishes of the Lombardy region of Italy: it is the main ingredient of Tiramisù. It is sometimes used replacing butter or Parmigiano Reggiano Cheese to thicken and enrich Risotto.

Processing technology





This Mascarpone cheese is produced by the ultrafiltration ACID-THERMIC coagulation of FRESH CENTRIFUGAL cream, obtained by the skimming of EXCLUSIVELY ITALIAN RAW milk, different from the ancient processing done on canvas and lemon juice.

The fat content is 47.7%. The texture of the mascarpone is more delicate and the flavor is more intimate.

This Mascarpone Cheese is low in Furosine, meaning less exposure to heat treatment in order to ensure a subtle taste; a less "burnt" smell.


安乐滋马斯卡波尼采用超滤离心工艺生产,相比传统使用帆布加柠檬汁的生产工艺,最大限度的避免了牛奶与氧气接触产生的酸味;只选取意大利生牛乳作为原料!富含乳脂肪,口感浓郁、细腻!脂肪含量高出47.7%。马斯卡波尼的质地更加细腻,味道更加柔和。马斯卡波尼含有较低的Furosine值,意味着更少的热处理,以确保更细致的口感和没那么浓厚的烧焦味。


Notes:

Furosine: A compound formed by the hydrolysis of Amadori compounds in food; its level in processed foods is a measure of heat treatment.

【 Recipe: Tiramisu 】















Ingredients for 8 people:

300g biscuits 300克饼干

500g mascarpone AMBROSI 

500g马斯卡波尼

4 eggs 4个鸡蛋

Rum 朗姆

7 tablespoons sugar 7勺糖

1 cup strong coffee 1杯咖啡

Cocoa powder 可可粉


Beat the egg yolks and 5 tablespoons sugar, combine mascarpone cheese and 3 tablespoons of rum, then the egg whites. Mix coffee, rum, and 2 tablespoons sugar, dilute with a little water and soak the biscuits. In an alternative press a layer of biscuits in a mascarpone cream to use up the ingredients. Chill for at least 1 hour. Dust with cacao.


打蛋黄,将5汤匙糖,马斯卡波尼和3汤匙朗姆酒混合, 然后加入蛋清,混合咖啡, 朗姆酒和2汤匙糖, 用少量水稀释并浸泡饼干。另一种方法是在马斯卡波尼奶油中加一层饼干以消耗这些成分. 冷却至少1小时。最后撒上可可粉即可。
