JJ Global is proud to present wild caught FRENCH DOVER SOLE from Brittany!

Dover Sole is world-famous for its firm texture, white flesh, and mild buttery flavor. It is fished from February to April as it migrates towards France. These traditional fishermen, that we source our fish from, know the migration routes intimately and are committed to sustainable fishing and protecting their environment. They fish with light nets, and monitor the fish migration patterns to ensure that the population is healthy.

Fast and Easy Pan-Fried Dover Sole

Dredge filets in flour, season with salt and pepper.

将鱼肉裹面粉，同时用适量盐和胡椒粉调味。

Heat 2 or 3 tablespoons of butter in a large skillet over medium heat, until melted. Quickly fry filets, 2 or 3 at a time for 3 or 4 minutes per side, depending on thickness, until golden brown on both sides. Remove fish, cover and keep warm.

Melt 2 or 3 more tablespoons of butter, swirl in pan, scraping up bits, add the lemon juice, capers and season with salt and pepper if necessary. Serve over fish. Sprinkle with chopped parsley.
