We’d like to present the recipe done by Veliche pastry chef, a special and rich flavoured chocolate mooncake. The two Veliche products used are Veliche High quality cocoa powder and Veliche 72 intensely dark couverture chocolate.

Veliche Mooncake: 

Chocolate & Lotus Seed Filling



 步骤

   Instructions  


1

将30克水,伏特加和小苏打,蜂蜜和油搅拌均匀,将面粉在蜂蜜混合物上方过滤,搅拌直至形成球形。Whisk together water, vodka, baking soda, honey and oil. Sift flours over honey mixture. Stir until a ball starts to form.

将面团倒在撒过一点面粉的台面上,塑成圆盘形状。用保鲜膜紧紧包裹,冷藏至少1小时。Turn out dough onto a lightly floured surface. Wrap tightly in plastic wrap, and refrigerate for at least 1 hour.

将面团分成15个球,用微湿的干净毛巾盖住。把梵丽时72巧克力和莲蓉馅料分成15个球。Divide dough into 15 balls. Cover with a lightly damp, clean towel. Same for Veliche 72 Chocolate and Lotus seeds paste filling.

将每个面团球卷成圆圈。将巧克力和莲蓉球用面团完全覆盖。轻轻塑造成球形。Roll each dough ball into a circle and wrap ball of Chocolate and Lotus seeds paste completely. Gently shape into a sphere.

撒少许面粉在月饼模具上。将月饼模放在月饼球上,用力按压。轻轻地取出月饼,冷冻1小时。Dust the mooncake mold with flour. Place mooncake in and firmly press down. Gently take out mooncakes. Set aside and freeze for 1 hour.

取出月饼,立即放入烤箱烘烤10分钟,180度。将蛋黄,奶油和30克水一起搅拌。将月饼刷上蛋黄混合液,再烤12分钟。Place cold mooncakes in oven and bake for 10 minutes, 180°C. Whisk together egg yolk, cream, and 30 gram of water. Brush over mooncakes and bake 12 minutes more.
