Dim sims are a variant of the traditional Chinese dumpling,which come in many shapes and sizes and are usually fried or steamed.

Australia's dim sim story began in 1942, when Chinese Australian businessman William Chen Wing Young realized that a number of elderly Chinese men who had come to Australia to work during the gold rush of the 1800s were left jobless. At the same time, Chen noticed how popular Cantonese dim sum had become in Australia. He came up with an idea: If he could mass produce siu mai, these men could sell them on food trucks and earn a living.

Though similar, dim sim isn't the same as the siu mai you would normally find in a Chinese restaurant. Dim sims are bigger. They have thicker skin to withstand freezing and delivery. The ingredients also differ.
尽管相似,但是澳式烧卖与你平时在中餐厅看到的烧卖不同。澳式烧卖个头更大,皮更厚,便于运输储存。而且馅料也有不同。
"I think the meats Chen used were pork and veal. He had to fill up with more vegetables, like celery and English cabbages. We didn't have Chinese cabbages. And a bit of onion for flavors. It's still delicious." says Elizabeth Chong, who is Chen's daughter.

The World's 50 Best Restaurant Awards -- an event considered the Oscars of the fine dining world -- was also obliged to take a hiatus last year, but it's finally back, and the two eateries at the top of the list are both in Copenhagen.

The No.1 spot this year goes to what is the best known name in gastronomy: Noma. Danish chef René Redzepi's three-Michelin star restaurant first opened in Copenhagen's Christianshavn neighborhood in 2003 and first took the top slot in the World's 50 Best Restaurants awards back in 2010.
