I am very excited to kick start this with a lady whom I personally find very inspiring. She began her PR career in Sweden and moved to Shanghai after a decade for new challenges in her field. After several promotions up the career ladder, the leading industry media Campaign Asia-Pacific selected her as one of the top 40 players below 40 years of age in the region!

In 2018, Charlotta Gandolfo made a total career change and launched her eponymous brand! She creates luxurious resort and social wear for nomads taking the road less traveled. The versatile day-to-night concept where all items are created to mix-and-match blends sophistication with laissez-faire for an exclusive yet unpretentious style. Today, it’s sold in high end fashion boutiques around the globe, as well as in the world’s most exclusive resorts. Furthermore, she and her husband are parents of a beautiful daughter Gabriella.

We first met a few years ago at a fashion event, and have been continuing this social tradition of running into each other and the 'let's catch up over dinner' before saying byes. With most of us currently working from home, it was the perfect opportunity for me to combine business with pleasure in her kitchen!


Of course I didn't arrive empty-handed

The Dishes

Boquerones al ajillo con piparras

Ingredients 

  • Marinated White Anchovies in Sunflower Oil 

  • Olive oil 

  • Finely chopped garlic 

  • Thinly sliced piparra 

  • Chopped Parsley 


Method

1. Place the white anchovies on a plate. 

2. Thinly slice Piparras and put aside. 

3. Finely chop garlic and cook in extra virgin olive oil until is golden brown.  


Finishing and presentation: Pour the cooked chopped garlic with olive oil on top of the boquerones, sprinkle the thinly sliced piparra peppers & chopped parsley.  

 

Optional Serve with toasted sourdough bread. And a glass of Patas Arriba Albariño!


配料

  • 葵花籽油腌制的白色凤尾鱼

  • 橄榄油

  • 切碎的大蒜

  • 切成薄片的piparra

  • 切碎的香菜


方法 

1.将白色凤尾鱼放在盘子上。 

2.将Piparras切成薄片,放在一旁 

3.切碎大蒜,然后用特级初榨橄榄油煮至金黄色。 


整理和展示:将煮熟的切碎的大蒜和橄榄油倒在鱼身上,撒上切成薄片的piparra辣椒和切碎的香菜。


可选配烤面包。还有一杯Patas Arriba Albariño


White asparagus with egg and iberico ham

Ingredients

  • White Asparagus (el Navaricco)

  • 2 Hard boiled eggs

  • Iberico Ham (Carrasco)

  • Melted butter (3 spoons)


Method

1. Place  the asparagus on a plate. 

2. Fill a pan with water. Once boiled, add salt then place 2 eggs gently in the pan with a spoon. Let it boil for 10 mins.

3. Peel the eggs and finely chop the eggs.

4. Take 3-4 slices of iberico ham, thinly slice it. 

5. Sprinkle egg and iberico ham over the asparagus.

6. Melt 3 spoons of non salted butter in a pan and pour it over the egg and ham.


配料

  • 白芦笋(el Navaricco)

  • 2个煮鸡蛋

  • 伊比利亚火腿(卡拉斯科)

  • 融化的黄油(3匙)


方法 

1.将芦笋放在盘子上。 

2.锅里倒入水。煮沸后,加盐,然后用勺子将2个鸡蛋轻轻放在锅中。煮沸10分钟。 

3.将鸡蛋去壳,切碎。 

4.取3-4片伊比利亚火腿,切成薄片。 

5.在芦笋上撒鸡蛋碎和伊比利亚火腿。 

6.在锅中融化3汤匙黄油,然后将其倒在鸡蛋和火腿上。



Pulpo a Feira

Ingredients

  • 1 pack of octopus leg

  • 250g chopped parboiled potatoes  

  • chopped parsley  

  • whipped cream

  • 2 cups of water  

  • 1/2 tsp sea salt flakes   

  • 20ml extra virgin olive oil   

  • 1/2 tsp spicy smoked paprika  


Method

1. Heat olive oil in a pan and add the parboiled potatoes. 

2. Add a pinch of salt and stir potatoes occasionally for two minutes.   

3. Add the liquid from the octopus bag plus two cups of water to cover the potatoes. Bring to a boil.   

4. Blend the potatoes, add a generous splash of whipped cream for a creamy texture.   

5. Heat olive oil in a pan and sear the octopus legs quickly over high heat. 

6. Slice seared octopus into 2-3 centimeter pieces.   

7. Pour the potato cream on a big plate and sprinkle with spicy smoked paprika. Drizzle with olive oil. 

8. Place the sliced octopus on the potato cream. Sprinkle sea salt flakes and chopped parsley to finish. 


配料

  • 1包章鱼腿

  • 250克切碎的半熟土豆

  • 切碎的香菜

  • 鲜奶油

  • 2杯水

  • 1/2茶匙海盐片

  • 20毫升特级初榨橄榄油

  • 1/2茶匙辣熏辣椒粉


方法 

1.在锅中加热橄榄油,然后加入煮熟的土豆。 

2.加入少许盐,不时搅拌土豆两分钟。

3.从章鱼产品袋中取汤汁,再加两杯水,盖住土豆,煮到水开。

4.搅拌土豆,加一点奶油,使奶油质地柔软。

5.在平底锅中加热橄榄油,然后用高火快速煎一下章鱼腿。

6.将煎好的章鱼切成2-3厘米的小块。

7.将土豆奶油倒在一个大盘子上,撒上辣熏辣椒粉。淋上橄榄油。

8.将切片的章鱼放在马铃薯奶油上。撒上海盐片和切碎的香菜。
