Sirloin is one of the top three cuts of beef. It is the most common seen steak in high-end restaurants. The "New York" steak often heard refers to the sirloin /striploin. Sirloin is cut from the outer back of the animal. The meat is flavorful and tender. It has stronger meaty flavor than the ribeye but less tender than it. The natural milky flavor of the Argentine grain-fed Brangus Sirloin is suitable to cook till medium to medium well. URUGUAY UYYU WAGYU OYSTER BLADE M5-7 (200G)
Oyster blade is a cut that comes from the shoulder of the animal, the meat is tender and super juicy, and can be used as a steak. The tenderness of this cut can be compared to filet, ribeye and chuck flap steaks, which are primary cuts in a wagyu. Thickness can be switched freely and will not change the tenderness of it. Commonly known as T-bone steak or just T-bone. As the name suggests, it has a T-shaped bone in the middle, left side filet, right side sirloin, one piece of meat that has two different taste and texture. Our UYYU wagyu T-bone’s filet (beef tenderloin) has a characteristic sweetness and aroma that are accompanied by the soft texture similar to cotton. The right side’s sirloin has a beautiful fat marbling that makes the cut super juicy and suculent. T-bone is suitable for meat fans of any level.
