Chorizo and Butter Bean Stew

I am sure that many of you in the past weeks have cooked at least once, or been busy honing your edible art skills to amateur chef level at least!

CHORIZO AND BUTTER BEAN STEW RECIPE

Ingredients 配料

  • 1 large onions, diced 大洋葱,切成丁

  • Garlic, 2-4 toes, minced 大蒜,2-4趾,切碎

  • Parsley, finely chopped 欧芹,切碎

  • 1 King mushroom, cut in 3 cm long strips 大蘑菇,切成3厘米长的条

  • 2 Chorizo sausages (optional, replace with spicy chorizo) 香肠香肠

  • 3 stalks of celery, thinly sliced 芹菜杆,切成薄片

  • 2 Carrots, cut in random chunks 胡萝卜,切成薄片

  • 1 tin of peeled tomatoes 400g 1罐去皮番茄400克

  • 2tbsp Tomato puree 2汤匙番茄酱

  • 1 tin of Butterbeans 400g 1罐奶油豆400克

  • 1 litre Vegetable stock 1升蔬菜汤

  • Extra Virgin Olive Oil 特级初榨橄榄油

  • Salt (add to taste) 盐

  • Black Pepper (add to taste) 黑胡椒

  • Oregano (add to taste) 牛至

Butter Bean (el Navarrico)


STEP 1

Heat up a large saucepan with some Extra Virgin Olive Oil. Fry Chorizo sausages on both sides. Remove from pan. Cut in 1cm slices.


用一些特级初榨橄榄油加热一个大锅。煎香肠两面。从锅中取出。切成1厘米的片。


STEP 2

Keep the oil released from the Chorizo sausages. Add onion, celery, carrots and some oregano. Fry for 5 mins.


保持油从口利左香肠中释放出来。加入洋葱,芹菜,胡萝卜和一些牛至。炒5分钟。


STEP 3

In seperate sauce pan, heat some Extra virgin olive oil. Fry king mushroom till golden then add garlic. Once fragrant add some parsley, turn off heat. Put aside.


在单独的锅中,加热一些特级初榨橄榄油。将国王蘑菇炒至金黄色,然后加入大蒜。放香后加入香菜,关火。放在一边。


STEP 4

Add Tomato puree, peeled tomatoes and stock to the onion celery and carrots. Bring to a boil. Add sliced chorizo, king mushroom and butter beans. Allow to simmer for 20 mins. Add salt and black pepper to taste. Sprinkle remaining parsley on top. Serve with brown rice, baked potato or crusty baguette.


在洋葱芹菜和胡萝卜中加入番茄泥,去皮的西红柿和高汤。煮滚。加入切片的香肠,国王蘑菇和黄油豆。慢炖20分钟。加入盐和黑胡椒调味。将剩余的欧芹撒在上面。与糙米,烤土豆或硬面包面包一起食用。

A fresh and vibrant style of biodynamic wine from Ribera del Duero. Beautiful dark wine red blend of Tempranillo and Merlot. Floral aromas of softness and sweetness with notes as lilacs, rosemary, honey, light roast, bay leaf, black pepper. Wine velvety on the palate, full of softness, with a saline mineral freshness surrounding the grape flavor.

"Los Cantos" means river stones, and the talented folks at Finca Torremilanos use them to distinguish their five parcels situated two kilometers, one might say a cantos’ throw, south of the river Duero.


Los Cantos”的意思是:河里的石头。Finca Torremilanos地区才华横溢的人们用这个词来区分位于杜罗河以南两公里处(当地也有一种说法:一个Cantos那么远)的五个地区。

In a dynamic city like Shanghai, where most of us are so consumed in work and social activities, home cooking has become a rare activity till recent. I want to let you know that cooking isn't performance art. For me personally, it's an active meditation, to unwind after a long day. Cooking is a healthy basic skill to have, and if I can do it, so can you!
