Herbs roasted mixed veggies

Ingredients

1/2 lotus root, peeled, cut into 5mm slices
2-3 carrots, peeled, cut them vertically in half or 4
(to reduce the thickness)
2-3 purple carrots, cut them vertically in half or 4
1/4 broccoli, cut into florets
1/4 cauliflower, cut into florets
1/2 cup cherry tomatoes
1/2 cup baby cabbage
1/2 cup mushroom
2-3 tsp fresh herb, chopped (I used fresh basil and parsley)
(can be thyme, rosemary, basil or parsley)
1/4 cup extra virgin olive oil
Salt and pepper to taste
(You can vary this recipe just by substituting with different veggies
in your veggies box :)

Instructions

① Preheat oven to 200˚C/200˚C fan-forced. You could line with nonstick foil for easy clean up or brush over with olive oil.
② Lay all the vegetable on a foil lined baking sheet ( or directly if you brush over with olive oil)
③ Using the brush, brush all the veggies with extra virgin olive oil, and season with salt, pepper and chopped herb. Roast for 15min at 200˚C.
④Open the oven, then turn the veggies over with some tongs. Then continue roasting 15-20minutes. Remove from the oven, sprinkle with the extra salt and pepper (if needed), and garnish with the leftover chopped parsley.
