Let's make the traditional Dim Sum under the guidance from Master Xiao——the lady who won the Senior pastry chef in Qiaojiazha couple of years ago.
Today we started to make Maqiu 麻球(Deep-Fried Glutinous Rice Balls withSesame). Oh, the Dim sum name is so long in English!
But it doesn't take long time to make the Maqiu. With glutinous rice flour, sugar, sesame and red bean paste, you can produce the lovely Maqiu per Master Xiao's instruction.
今日的麻球课上，人人动手和面、包馅、煎炸、品尝……不管是老学员，还是新加入的学员，大家统统投入到麻球制作的过程中！从原料的配比到和面的手势，从做‘小碗’的技巧到油炸的油温，大家听、看、记、练地仔细。眼看着油锅中的麻球从一开始的白净到最终的金黄，从起初的元宵大小通过适当的油温不停地养胖，直至‘胖到’一倍的大小，这样的变化很奇妙，很有成就感，尤其是通过自己的双手！
After Maqiu's practice, we started to do exercises on Xiaolongbao 小笼包. We practiced for the basic steps in this class for warm-up.
麻球制作完后，我们穿插了段小笼包基本功大练兵！由于学习小笼的制作不是一蹴而就的。所以，我们会不定期地在课堂上进行基本功的训练，配合学员的回家练习，这样能大大提高制作小笼的成功率。
