区块链技术在食品溯源体系中的应用




摘要:区块链技术是近年来在计算机技术的基础之上,可以在各行各业广泛使用的一种账本技术。由于区块链具有高效性、连续性、不可更改性等良好的特点,受到了相关人士的推崇。频繁发生的食品安全事故使得消费者的生命健康安全受到重大威胁,也使得公众对食品安全全程全息的管控理念和技术提出高要求。食品供应链安全问题在于食品安全信息不对称、原料信息填写不准确、生产销售信息被篡改,亟需建立一种全新的食品安全风险信息溯源管控体系,保障食品供应链中信息高效、流畅的传递,并可以促进生产信息公开,减少信息的中心化带来的信任问题。本文主要探究了粮食及其产品、药食两用食品、鲜冷食品利用区块链进行溯源体系建设的方法,分析了食品掺假事件中,区块链技术可保障供应过程中的信息来源可靠以及信息可靠与拥有对等,结合物联网技术,实现生产者、政府、消费者等多方监督检验遏制食品的掺假现象。最后讨论了区块链技术在食品信息安全监督中的作用,提出了统一的编码体系和密态可用技术实现食品监管部门与消费者对食品安全信息进行查验。区块链是计算机等多学科多领域的技术集成,需把区块链和食品供应链及监管有效结合,方能实现区块链在食品安全食品溯源体系中的作用。

Application of Blockchain Technology in Food Traceability System



Abstract: Blockchain technology is a ledger technology that can be widely used in various industries on the basis of computer technology in recent years.Due to its high efficiency, continuity and non-modifiable characteristics, blockchain has been highly praised by relevant people. Frequent food safety accidents pose a major threat to the life and health of consumers, and also make the public put forward high requirements for the whole-process holographic control concept and technology of food safety. It is urgent to establish a new food safety risk information traceability control system to ensure the efficient and smooth transmission of information in the food supply chain, and to promote the disclosure of production information and reduce the trust problems caused by the centralization of information.This paper mainly explores the method of constructing the traceability system of grain and its products, food and medicine dual-use food, fresh and cold food using Blockchain. In the analysis of food adulteration incidents, blockchain technology can ensure the reliability of information sources in the supply process and the reciprocity of information reliability and ownership.Combined with the Internet of Things technology, the producer, government, consumers and other parties to supervise and inspect to curb the adulteration of food. Finally, the role of blockchain technology in food information safety supervision is discussed, and a unified coding system and dense available technology are proposed to realize the inspection of food safety information by food regulatory authorities and consumers. Blockchain is a technology integration of multiple disciplines and fields such as computer. It is necessary to effectively combine blockchain with food supply chain and supervision to realize the role of blockchain in food safety and food traceability system.
