On 24 November, Ching International, on behalf of Fenjiu International, hosted a new session of the Baijiu Masterclass at Crypt on the Green in London. The event brought together UK hospitality professionals and spirits enthusiasts keen to further explore the flavour and culture of Fenjiu in a setting rich with history.
Located in Clerkenwell, Crypt on the Green occupies an 18th-century church crypt and is celebrated for its distinctive vaulted brick architecture. It is regarded as one of central London’s most atmospheric premium event spaces — an apt backdrop for a Chinese baijiu masterclass.
Marie Cheong Thong, Chair of the Baijiu Association, led the session. As President of the British Sake Association, a senior judge at major international spirits competitions, and Baijiu Ambassador for Renhuai and Chengdu, Marie draws on a rare blend of global standards expertise and deep knowledge of Chinese baijiu. Her cross-cultural perspective shaped a clear and engaging introduction to Fenjiu.
Participants sampled a range of baijiu styles — light-aroma, strong-aroma and sauce-aroma — with Fenjiu’s light-aroma expressions attracting the most interest.
Marie explained each spirit’s aromas and structure, pointing out their subtle differences. Guests listened closely, took notes and asked thoughtful questions as the discussion developed.




Further tastings of Fenjiu Fen Chiew Brown and the Silk Road Series prompted a discussion on the growing presence of Fenjiu cocktails in the UK and Europe. Using London as an example, Marie highlighted the spirit’s potential in flavour innovation and brand positioning—points that strongly resonated with the audience.



Several guests, including representatives from the UK sake sector and the luxury goods industry, stayed on afterwards to explore opportunities for Fenjiu in casual dining and premium lifestyle venues, reflecting the level of interest the masterclass generated.
