一场秋雨一场寒,从十月一假期开始我们就明显感觉到天气变冷了,翻开日历,下个月就要立冬了,在寒冷的天气里必不可少的食物你会想到什么呢?当然是一根热乎乎,滋滋冒油的香肠,想到这,已经不禁想流口水了!为了能和朋友们肠来肠往,大厨子这次给朋友们准备了“非同寻肠”,想必大家一定猜到了是什么,让我们一起来揭晓答案叭!


Hey friends, it’s been a while, but I’m still striving to bring good, healthy and honest food to you, on a most direct way from origin. The last couple of weeks I’ve been on a quest to find the perfect Swiss Sausage, made locally, of course. After trying dozens of custom made samples and making a trial sale via my friends, I’ve found three that have convinced my- and also the first clients’ taste buds.



没错,大厨子这次给大家带来的是瑞士香肠哦~我们遵循了纯正瑞士香肠的食谱制作而成,一共三款,每款都是人间美味。烤香肠在瑞士是很受欢迎的小吃之一,走在瑞士街头时常会被烤香肠的香味所吸引,纯肉制作,飘香四溢,可谓是街头代表性的小吃美食。在瑞士,不管是小型的家庭聚餐,外出野餐还是大型的传统节日,都少不了香肠的踪影。


We followed the original recipe of each Swiss sausage and there are three kinds in total, and each one is obviously delicious. A bit of back-ground to this: Roast sausages are one of the most popular snacks in Switzerland. Walking in the streets of Switzerland, you will often be attracted by the smell of roasted sausages. It is made of pure meat and smells delicious. It can be said that it is a typical street snack food. In Switzerland, sausages are indispensable to small family dinners, picnics and large traditional festivals.

  瑞士小牛肉香肠

Swiss veal sausage



瑞士小牛肉香肠在瑞士也叫圣加仑小牛肉香肠,肉质细腻,口感嫩滑。家喻户晓的它是瑞士烧烤野餐、宗教庆典和其他节日餐桌上的宠儿,甚至在瑞士国庆日(8月1日)的餐桌上也是不可或缺的。有文献记载的证据表明,圣加仑香肠于15世纪就已存在。1438年,圣加仑屠夫协会概述了生产这种香肠的要求。从那时起,这个配方的基本成分就没有改变。香肠呈白色部分原因是香肠中添加了牛奶。


Swiss veal sausage is also called St. Galler Bratwurst in Switzerland. The meat is delicate and tastes tender and smooth. It is well known that it is the favorite of Swiss barbecues, picnics, religious celebrations and other festivals, and even indispensable on the Swiss National Day (August 1st). Documented evidence shows that St. Galler Bratwurst existed in the 15th century. In 1438, the St. Galler Butcher's Association outlined the requirements for the production of this sausage. Since then, the basic ingredients of this formula have not changed. The white sausage is partly due to the addition of milk to the sausage.



让圣加仑肉商引以为傲的是,2007年瑞士圣加仑香肠获得IGP(受保护的地理标志)这一殊荣。只有精挑细选的上品牛肉、少量的熏猪肉和新鲜的牛奶才可能被用作配料。也只有使用盐、白胡椒和肉豆蔻(磨碎的豆蔻壳),才能贴上St. Galler Bratwurst IGP的标签。当然也可以使用其他配料,如洋葱、柠檬、小豆蔻、香菜、芹菜和姜,香肠最外层由猪肠衣包裹。瑞士人钟爱刚从烤架端出的松脆棕色香肠,搭配上香脆的Bürli卷共同食用。


What makes St. Galler Butchers proud is that in 2007, St. Galler sausage won the honor of IGP (Protected Geographical Indication). Only carefully selected premium beef, a small amount of smoked pork and fresh milk can be used as ingredients. Also only using salt, white pepper and nutmeg (ground cardamom husks) can the St. Galler Bratwurst IGP be labelled. Of course, other ingredients can also be used, such as onion, lemon, cardamom, coriander, celery and ginger. The outermost layer of sausage is wrapped in pig casings. The Swiss love crunchy brown sausages fresh from the grill, served with crispy Bürli rolls.




恩格丁香肠

Engadiner Hauswrust


不同于小牛肉香肠,恩格丁香肠是一种由牛肉和猪肉制成的熏制肉汤香肠,烤肉相对粗糙,烟熏味浓郁,它略微弯曲,长约20厘米,重260克。

同样,置于烤架上,不要切碎,直接用大火烤约15分钟,中间翻两到三次即可,届时你就会得到香到无法自拔,滋滋冒油的熏肉香肠,或者置于热水中炖10分钟。介绍到这,口水都要直流三千尺了!当然你可以搭配任何你想吃的配菜,沙拉,蔬菜,水果等或者只是一片美味的面包。炸土豆、玉米粥、盐土豆和泡菜、土豆沙拉也是常用搭配。


Unlike veal sausage, Engadiner sausage is a kind of smoked broth sausage made of beef and pork. The roast meat is relatively rough, with a strong smoky flavor. It is slightly curved, about 20 centimeters long and weighs 260 grams.

Since this sausage is rather salty, we suggest to simmer it in hot water for 10 minutes (because pan-fry will make it even taste saltier). Speaking of this, my saliva will flow 3000 feet! Of course, you can match any side dishes you want, salad, vegetables, fruits, etc. or just a piece of delicious bread. Fried potatoes, corn porridge, salt potatoes and pickles, potato salad are also commonly used.



         烟熏瑞士奶酪香肠

Smoked Swiss cheese sausage



听到这个名字就知道香肠中一定会有奶酪,如图所示也能看到香肠里面的奶酪小碎块,给原本美味的香肠又增添了一种风味。为什么瑞士香肠里要添加奶酪呢?瑞士3/4国土为阿尔卑斯山脉,丰饶的高山牧场为瑞士的畜牧业发展提供了良好的条件,也为奶酪生产提供了充足的原料。瑞士奶酪美味,种类丰富,营养价值高,也是瑞士饮食文化的重要组成部分。由此可以推断,以奶酪为食材的菜肴也肯定丰富多样了,那香肠也必不可少喽~


When you hear this name, you know that there must be cheese in the sausage. As shown in the picture, you can also see the small pieces of cheese in the sausage, adding another flavor to the original delicious sausage. Why do Swiss sausages have cheese? Three quarters of Switzerland is located in the Alps. The rich alpine pastures provide good conditions for the development of animal husbandry in Switzerland, as well as sufficient raw materials for cheese production. Swiss cheese is delicious, rich in variety and high in nutritional value. It is also an important part of Swiss food culture. 此款香肠和恩加丁香肠一样具有浓郁的烟熏味,但不同的是口感松脆一点,不同于小牛肠的是,此款香肠最外层是由羊肠衣包裹。香醇的奶酪味让这款像款香肠别具一番风味。在吃到如此美味的香肠之前,你只需烤5-8分钟,或者油煎,同样你也可以和恩格丁香肠一样水煮十分钟,搭配你想吃的配菜或者蘸酱,比如芥末酱或者番茄酱。之后你就可以享受到一份美味的瑞士奶酪香肠~


This sausage has the same strong smoke flavor as Engadiner’s sausage, but the difference is that it tastes a little crunchy. Unlike veal sausage, the outermost layer of this sausage is wrapped by sheep casings. The mellow cheese flavor makes this kind of sausage unique. Before eating such delicious sausage, you only need to roast it for 5-8 minutes, or fry it in oil, you can also boil it for 10 minutes like Engadiner’s sausage, and serve it with the side dishes or dipping sauce you want, such as mustard sauce or tomato sauce. Then you can enjoy a delicious Swiss cheese sausage~
