It is known for its complex interplay of at leastthree and up to four or five fundamental taste senses in each dish or theoverall meal: sour, sweet, salty, bitter and spicy.

Common flavors in Thai food come from garlic,galangal, coriander/cilantro, lemon grass, shallots, pepper, kaffir limeleaves, shrimp paste, fish sauce, and, of course, chilies. Palm sugar, madefrom the sap of certain Borassus palms, is used to sweeten dishes while limeand tamarind contribute sour notes. Meats used in Thai cuisine are usually porkand chicken, and also duck, beef, and water buffalo.
