China's Ministry of Human Resources and Social Security recently recognized hotpot chef as an independent occupation.
根据官方定义,火锅料理师是指从事火锅锅底、酱料、蘸料的制作,菜肴预制,菜品切配,并具备一定餐饮经营、管理能力的人员。

“The condiments are the soul of a hotpot. The good taste of condiments comes from well-selected ingredients and good control of the oil temperature. In other words, we need to control the duration and temperature of the heating process with precision,” said Wang Wenjun, vice-chairman of the Chongqing Hotpot Association.

Hotpot chefs in Chongqing, a municipality in southwest China where spicy hotpot has long enjoyed national fame, were encouraged by the recognition.
The recognition by the Occupational Classification System of the People's Republic of China (2022) paved way for the standardization of the industry and presented new opportunities.
After hotpot chef becomes a new occupation, a number of new training bases will be established to further systematize and professionalize the training of hot pot talents.
